Great Wine, Great Food!

Advice from Wine Taster Jill Stacey

Starting this week, Jill is going to give us a new wine to try out each week, plus a word for our growing Wine Vocabulary.  Here's the first round.

Wine of the week: Finca Los Primos Cabernet Sauvignon ~ San Rafael ~ Mendoza, Argentina.
wine of the weekThe classic Cabernet aromas of black pepper, cedar, slight herbal and berry notes and evident in the nose. The finish is smooth yet yields a few surprising layers of flavors.  Round, Velvety Smooth and surprisingly priced $13 ~ $14 a bottle! Perfect with or without Food!

Word of the week: There are many terms in the glossary of a wine book. But one we tend to overlook is the technical definition of Fermentation. The most recent and cleanest definition I have found is in Karen MacNeil’s The Wine Bible, Workman Publishing Company, Inc NYC, NY.  So here you go: Fermentation is the process during grape fermentation whereby yeasts convert the natural sugar in the grapes into Alcohol and Carbon Dioxide. The alcohol will remain a constituent of the wine, that result, but in most cases, the carbon dioxide will be allowed to escape as a by-product. There are many types of fermentation, we will define those next week.

Wine Pairing: Member Ann’s submission Snicker Salad.

Snicker Salad –
Ingredients
3 Granny Smith Apples
3 Snicker Bars
1 5 oz can of crushed pineapple
1 small tub of cool whip
1/4 cup of chopped nuts (any kind will work)

This salad recipe sounds too good to be true. The best of both worlds, healthy fruit with a kick of junk! But seriously with the sweet, yet acid and tartness of the apples I could see a nice crisp Riesling. Stay away from the Auslese, or Spatlese Rieslings, they are too sweet. Clean Slate Riesling from the Mosel-Saar-Ruwer region of Germany is a wonderful new style of Riesling. This particular area of the region boasts steep slate hills and winding rivers. This climate and soil conditions yields a crisp slightly acidic style of Riesling, reminiscent of a crisp slightly ripe peach. The wine is well balanced and with a clean finish a perfect compliment to this salad.
