How long can you keep that bottle of wine after it's open?

Are you tired of throwing away a full bottle of wine, because it isn't finished the night you open it? Well, we've asked our local wine expert, Jill Stacey for some tips on preserving that precious left-over wine. Here's what she had to say.
If you know you are going to have the rest of the bottle the next day than go ahead and just re-cork it and set it on your counter. You never want to put wine in the refrigerator. The extreme cold can break the wine down and make it go stale. You also do not want to leave it out to get warmer than 75-76 degrees because that can "cook" the wine and also make it not taste good.
If you have a wine refrigerator it would be best to put a stopper on it and restore in the wine refrigerator and keep it at a cool 62-68 degrees. White and Red should stay approximately two days.
If you need it to stay longer than you can look for a product called "Private Preserver." It's a can of air that you apply one long spray and four short bursts into a 750ml bottle. Re-cork it immediately and store upright. Each time you pour a glass you have to reapply. It works by laying down a protective gas on the wine's surface; it blocks out the oxygen and preserves the taste and the bouquet in the bottles and decanters. There are no fluorocarbons and nothing harmful - it contains nitrogen, carbon dioxide and argon. And it adds nothing to the taste of the wine. Using this product on White wines can typically last 5-6 days and Reds 6-7 days.
