Give Thanks for Leftover Turkey!

Advice from Registered Dietician Michelle Gorman

You’ve been planning for weeks for a wonderful Thanksgiving meal and now it’s over.  But you still have turkey, vegetables, and more.  Here are some delicious recipes for those turkey leftovers.

RUSTIC TURKEY POT PIE
2 packages turkey or brown gravy mix
2 ¼ cups skim milk, divided
1 package (10 ounces) frozen mixed vegetables, thawed
1 cup cooked, cubed turkey or chicken
1 ¼ cups reduced fat biscuit mix or 1 package (5.5 ounce) reduced fat biscuits

In a 2 quart saucepan, whisk together gravy mixes and 1 ½ cups milk.  Bring to a boil over medium-high heat, stirring occasionally.  Remove from heat; stir in vegetables and turkey.  Pour mixture into greased 9-inch glass pie pan.  In medium bowl, combine remaining milk and biscuit mix.  Stir until just mixed, spoon over turkey mixture.  Bake in 400º oven fro 35 minutes or until internal temperature is 165ºF and biscuits are brown and no longer doughy.  Recipe makes 4 servings

TURKEY PEAR SALAD
2 cups cubed cooked turkey
1 bag fresh herb and salad mixture
1 ripe pear cut into chunks
¾ cup Roquefort
1/3 cup balsamic vinaigrette dressing

In bowl toss all ingredients garnish with toasted walnuts or pecans.
Recipe makes 4 servings.

TURKEY LASAGNA
¾ pound bowtie shaped cooked pasta
3 cups marinara sauce
2 cups shredded cooked turkey
1 cup ricotta cheese
½ cup shredded mozzarella

In pasta pot, heat pasta, sauce and turkey.  Place in four (4) microwave safe bowls- top with cheeses.  Microwave 30 seconds.  Recipe makes 4 servings.
