Mexican Wedding Pineapple Cake

This is a recipe I got from my Mom and she got it from her Mom, it's a family recipe. It is oh so delicious. Enjoy! Lori
Cake Ingredients: 2 cups flour 2 cups sugar 2 teaspoons baking soda 2 teaspoons vanilla 2 eggs 1- 20 oz. can crushed pineapple and juice 1 cup chopped walnuts
Frosting Ingredients: 1 8 oz. cream cheese (soft) 3/4 cups sugar 1teaspoon vanilla 1 stick butter or margarine
Cake instructions: By hand or with a blender, mix all the ingredients in one bowl. Put it in a greased, 13" x 9" pan and bake it at 350 degrees for 35-40 minutes.
Frosting instructions: Combine cream cheese, butter or margarine, sugar, and vanilla. Mix it with a blender.
Allow cake to cool before frosting. Frosted cake must be refrigerated all times because of the cream cheese frosting. |
