Tasty Tiramisu!

From Sweet Connection Member Chuck

This is a wonderful recipe from Italy, the ladyfinger recipe dates back from the year 1348! Tiramisu means pick me up, because of the espresso.

authentic tiramisu About Sweet Connection Member, Chuck
I truly have a passion for cooking. I learned how to cook at an early age with my Mom, learning all her Italian dishes. My wife and I have traveled several times to Italy and frequented the trattorias to learn different recipes. I am currently working on an Italian cookbook.

Ingredients:
About 24 ladyfingers (to simplify this recipe I suggest buying store bought ladyfingers)
3 eggs
1/2 cup sugar
1/2 cup flour
Salt
2/3 tbsp. butter
1/4 cup confectioners sugar
Tiramisu 3/4 cup heavy cream
5 tbsp. sugar
4 egg yolks
1 lb. mascarpone 4 tbsp.
Strong espresso
Cocoa powder

Instructions

Ladyfingers: Separate eggs and beat the yolks with a scant 1/3 cup sugar until frothy. Gradually add 1/3 cup flour, pinch of salt and mix.

In another bowl mix egg whites until stiff, carefully fold into egg yolks.

Grease a baking sheet with butter, sprinkle with flour.

Fill a piping bag and shape 4 inch long and ½ inch wide cookies.

Mix confectioners sugar and sprinkle over cookies wait 10 minutes and bake 300 till golden brown.

Cream filling: Beat cream with 1 tbsp. sugar until stiff whisk egg yolks with remaining sugar (4 tbsp.) until creamy stir in mascarpone one spoonful at a time lower speed

To assemble: Line ladyfingers in a 9 inch square pan, sprinkle with espresso then a layer of cream and then cover with another layer of ladyfingers and sprinkle with espresso, then a layer of cream sprinkle with cocoa powder and chill at least one hour and then enjoy!
